Brewer's Exegesis

What’s unique about Legacy IPA? One of a kind story: our Legacy IPA is based on our founder’s (more than) century-old recipe. Drinkability: you’ll find a noticeably lighter color to this IPA. It’s not technically a “session” beer, given the ABV, but you’ll notice that these go down surprisingly smoothly. Hop Profile: we recently updated the recipe to amplify the citrus character in the hop aroma and flavor. How did we do it? The Story: we located a recipe for our founder’s “West End IPA” that dates all the way back to 1906 and used his most recent iteration from 1914. Our current Legacy IPA recipe uses the same grain bill as the original recipe, but we took some liberties with the hop profile (to modernize to today’s palette). Drinkability: a century ago, they used lighter grains – we stayed true to the original recipe, which allows the crisp, clean hop flavor to shine through. Hop Profile: we did some experimenting on a couple fronts: (a) the hop grist – finding hops that play nicely together and accentuate a similar citrusy character, and (b) yeast update – ironically, yeast is one of the factors that most prominently impacts hop flavor (hop oil retention).
